Recipe: Crunchy Potato Burritos

In Highschool I worked for a fast food Mexican restaurant, Taco Bueno. Where I'm from there are quite a few tex/mex fast food joints but "Bueno" is the best and most authentic tasting. Working behind the scenes I got to see why. Aside from the condiments the meat, beans, chips,were all made fresh every morning. Good thing I was athletic back then because I♥LOVED♥the Food! I don't know why I never thought to do this before but as I was making lunch it hit me.
Crunchy Potato Burrito... Bueno makes it with a fried potato cake, queso, sour cream, lettuce, choice of beef or chicken. Here's my version.

Ingredients:                     Steamed Tortillas
The kind of tortillas you use really doesn't matter.
The key is how you prepare them. Steaming them makes them have a stretchy texture.
You can control that with the length of time you steam them.

Hash Browns
I had the Ore-Ida Shredded Potatoes

Ground Turkey

Spinach
Any leafy green would do.

Sour Cream
The real kind. I don't understand fat free 'Cream'.
What sort of fillers are they putting in there?

Simply: Season and Brown the turkey. While that's cooking prepare tortillas. I have a collapsible steaming basket that I place in my skillet. With inch of water in the bottom, cover the pan set heat to High. As the water boils place 1-3 tortillas in the basket. This will depend on the tortilla size. Prepare your hash browns according to the brand. Basically fried with a bit of peanut oil until golden crispy.

Ready to eat: For each burrito spread on the sour cream in a center line. Then add the hash browns. Sprinkle on the spinach and meat. Wrap and Done!

I feel weird posting this without pictures. Tsk, tsk. My camera and hard drive are super full. I usually use my phone as back up but it's M.I.A. However I'm happy to be putting together a recipe tute. Enjoy!

Homemade Dishwasher Detergent

Iwould have never thought so many things could be made from home. This year we've dabbled in laundry soap, cloth diaper laundry soap, deodorant, soap, and now dish detergent. It's super easy too (all except the soap since it requires a chemistry lab). What motivates me mainly is money, I'm sure I'm not the only one. We also have a septic tank and I'm learning about what is good to go down our drains. The recipe is very simple:
I used 1 cup borax
                       1 cup washing soda
For ever load I put some white vinegar in the rinse cycle compartment. That's it, we've gone through 3 washes and there are no spots. I'm loving it, if you try it let me know what you think. I'll have to calculate the savings I'm sure it'll blow my mind too.

Blueberry Muffins

How can you not love blueberries? I don't get it, they are sweet, good for you, and blue (well purple). My MIL gets all disgusted when I talk about making these. Weird. I found a recipe with a cinnamon streusel type topping and they are oh so good. We just bought a house and the first we went to use the oven it did not work. I baked like crazy for a month or two just because.


Let's Get started... Preheat oven to 400 degrees F. Now get all your ingredients together.

Ingredients:
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

Directions:
Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
I usually cut the topping in half because I always had tons left over. Maybe I didn't pack enough on the tops.

Bake for 20 to 25 minutes in the preheated oven, or until done.

Homemade Shampoo

     Ever think we all would shift back to the good old days? When you didn't need all these crazy chemicals running your life until that's all you depend on. That day has come for me and my family when I discovered how to make my own laundry soap. I've been at it 2 months and love not having to worry about getting to the store just so I could do laundry, hair, diapers, anything really. I've been using the Apple Cider Vinegar on my girl's hair for awhile and it works really well at stripping the stuff off their hair so I can add more stuff to moisturize. Here's the recipe for some homemade shampoo I'm trying inspired by theCheapnChoosy Blog.


What you'll need:
First Keep a box of baking soda in the bathroom
I currently have some in our bathroom we use to brush our teeth with.
Second Apple Cider Vinegar, in a spray bottle ad 1part ACV to 3parts water ex: 1/4cup ACV to 3/4cup water


What you do:

In the shower or bath take a small amount of baking soda and make a paste with the water. Wash your head and scalp. Then rinse and spray hair with your ACV solution. Let it sit then rinse. We have some lavender essential oil and I'll add that to the oil I use in my girls hair to give a fresh smell. The potency of the vinegar fades with time, ~15-20 minutes.

With our textured hair I'm not sure how the baking soda will work, if I'll be able to get it all out or not. I have to wash their hair section by section not in a whole mass (that'd be a mess).

Grandma's PB Cookies

1c Peanut Butter
1c Sugar
1 Egg
Mix it all together,
spoon out onto cookie sheet, and flatten with a fork in a cross pattern.
Bake at 350 for 8-10min. Add that 4th ingredient just for fun.

Tuesday Hops and Monday's Yummy

I promise I have been cooking more. I started Mommy Yummies on Monday's to make me do just that so mission accomplished ;) The hard part is documenting what I've made and working with my technical camera with my non-technical self. I would like to still recognize other Mommies and their Yummies. Yesterday I found the most delicious looking dessert only to find out it was a breakfast cake. OMGoodness, I can not wait to make this one and wished we still had some fresh berries left from our crop.

Raspberry Almond Breakfast Cheesecake

For the cake:
{2} packages crescent rolls
{2} 8 ounce packages of cream cheese
3/4 cup sugar
1 tsp vanilla extract or vanilla bean paste
1 tsp almond extract
1/2 tsp cinnamon
zest of one lemon
{1} egg yolk
1 small pint of raspberries

For the topping:
egg white
1/4 cup sugar
small package of sliced almonds

 
To begin, preheat your oven to 350 degrees.  Add the cream cheese, vanilla, almond, sugar, lemon zest, cinnamon, and egg yolk to a mixer and beat until smooth and fluffy, about 3 minutes.  {If you don't have a stand mixer, I would allow the cream cheese to soften just a bit before using a hand mixer.}

Unravel one package of crescent rolls and begin covering the bottom of your pan.  I used a round cheesecake pan here, but Emily uses a regular rectangular cake pan when she makes her version, just drop the cooking time to 25-30 minutes if you do.

Spoon the cream cheese mixture onto the crescent rolls... try to avoid licking the leftover batter, then say raw eggs be damned and lick it anyway.

Add most of the package of raspberries to the batter by lightly squishing them and pressing them into the pan.  Reserve a few berries for garnish.

Top with remaining package of crescent rolls.  Now, if you'd like it to look a bit fancy, lay them around the pan piece by piece with the point toward the middle, then curl the point in just a bit leaving a vent hole in the center.  Then give the whole top layer a good brushing with egg white.

Finally, top with the remaining 1/4 cup of sugar, then sprinkle the almonds along the outside edge of the pan.  Pop it in the oven for 40-50 minutes {about 30 minutes if you use a rectangle pan because the layers won't be as thick} and allow to cool on a wire cake rack to room temp.

You can then pop it in the fridge until you are ready to serve!  It holds up really well to making it the night before which means getting to sleep in.  My idea of a great morning!

Then, add a few raspberries on the plate, a sprig of mint and serve!

Meal Planning

I finally sat down yesterday to plan out our meals for the pay period wich is every two weeks. There are so many great meals to make and now I'm overwhelmed. Ugh...I need to stop that. So I am doing it and I will like it. I will like how I won't be scrambling for something to throw together when my blood sugar is too low. I found this planner to work with and fell in love with every at Simply Recipes. I serious am having a hard time choosing.
Also I think if I start holding myself accountable and posting Monday Meal Pannings along with Monday Mommy Yummies I'll be sure to get it done.

Here is yesterday's yummy treat. We had some left over rotisserie chicken I shredded and added pineapple juice, our favorite barbeque sauce, diced up bell peppers, and tomatoes. I like to always keep some pasta noodles or basmati rice already made in the fridge for dinner options. I bought marshmallows and chocoalte for smores but we have no graham crackers. Oh well you can never go wrong with chocolate and marshmallows. Those added to some fried up biscuit pieces served as yummy doughnuts for dessert.

Fresh Raspberries Anyone?

What is your favorite
fresh fruit to eat!
Mine has to be raspberries and I never liked them before,
there is just something about fruit that comes from the ground you own.

We bought our first home 6 months ago.
A raspberry bush, plum tree, apple tree, and cheery tree came with it.
We've just been eating them like this but I'd really love to make some jelly!

Monday Mommy Yummies
(they can't all be sweet)

Squirrel Gravy (sound yummy?)
My husband has been counting down the days to squirrel season ever since he made a bird house and the squirrels ransacked it!

4-6 squirrel boiled then meat taken off bones
4T melted butter
6T flour
1tsp garlic powder
1tsp hot pepper
(black or spicy hot, we like some heat)
1tsp chili pwdr
2 cups milk
water if needed
Melt the butter on the stove on med heat then add the flour stirring quickly. Slowly add milk using a whisk to keep gravy smooth and lump free. Add all the spices and cooked squirrel meet and constantly stir on med to high heat. You do not want to heat too high and risk scorching the gravy but not too low the gravy doesn't thicken. Add water bit by bit as gravy thickens for a texture you like. aprox 10-15min.
Serve over rice, noodles, or with rolls and veggies.

Monday Mommy Yummies

Mondays can be a drag to most especially if Daddy goes back to work and once again the house is under Mommy's  control (Bwaaa hahahaha). Our weekend was full of fun and family because my youngest daughter turned 4. The one thing I love about parties is getting to spend time with family and friends I don't get to see on a regular basis. The one thing I dislike is planning the party and forgetting the camera ;) luckily friends took some pictures and I took one that morning.

She wanted some cookies, since we didn't get them for the party today I made pb cookies with melted chocolate chips on top. They are oh-so yummy. Lets see if I can keep this up. Every Monday I plan to create a Mommy Yummy, Mmm. What do you normally do on Monday's? I've seen Meatless Mondays and I may just try that too, one thing at a time.

   
I followed this recipe. I didn't have brown sugar so I just used 1c of what we had, organic sugar.

Hi my name is Christy and I'm addicted to food.

Anyways this looks great I just need to find some popsicle molds
Homemade Popsicles

Ingredients: 

1 (3 ounce) box of Jell-O (Choose any flavor you'd like; I used Strawberry.)
1 envelope of Kool-Aid (Choose any flavor you'd like; I used Strawberry.)
1 cup sugar
2 cups boiling water
2 cups cold water (Note: If you make orange popsicles, you can replace the two cups of cold water with two cups of orange juice.)

Directions:

Combine Jell-O, Kool-Aid, and sugar in a large bowl. Add boiling water and stir to dissolve. Add cold water and stir. Pour into popsicle molds and freeze overnight. (Note: If you don't have molds, you can use small cups. When the filling is slightly frozen, insert popsicle sticks into the centers.) Pin It

Holiday Spice

If I could find a cutsie container to put the dry ingredients in this would be a great homemade holiday gift. I promise I will post pics when I make this. I found this great recipe here.

Holiday Hot Orange Drink

1 10 oz. jar Tang orange crystals
1/4 c lemonade mix
2 c sugar
2 tsp ground cinnamon
1 tsp ground cloves

Mix the above ingredients and store in a covered container.
Put half-a-cup of the mixture into ziploc bags and place them in the containers. Thats enough
mix to enjoy 7-8 cups of hot orange drink.

Chetzels

These look terribly good. I will be making these soon and post pictures. Sorry I was too excited to post this before properly documenting it. Chetzels (chex, pretzels, and chocolate) how can you go wrong with those ingredients. I found this recipe here. Love moms passing the goodness along. Keep it coming.
