Squirrel Gravy (sound yummy?)
My husband has been counting down the days to squirrel season ever since he made a bird house and the squirrels ransacked it!

4-6 squirrel boiled then meat taken off bones
4T melted butter
6T flour
1tsp garlic powder
1tsp hot pepper
(black or spicy hot, we like some heat)
1tsp chili pwdr
2 cups milk
water if needed
Melt the butter on the stove on med heat then add the flour stirring quickly. Slowly add milk using a whisk to keep gravy smooth and lump free. Add all the spices and cooked squirrel meet and constantly stir on med to high heat. You do not want to heat too high and risk scorching the gravy but not too low the gravy doesn't thicken. Add water bit by bit as gravy thickens for a texture you like. aprox 10-15min.
Serve over rice, noodles, or with rolls and veggies.
